all beef ween topped with NYC style pushcart onions, sauerkraut, and classic mustard on a soft ballpark bun.

Served as the Czechs do in hladinka, šnyt and mlíko pours. In 2023, we travelled to Plzeň, Czechia to become the first people in Canada to be trained on proper Czech beer pouring service.
Here’s where it gets dicey. The list turns over fast—one-offs from the edges of Europe, fresh drops from Toronto to the West Coast, and whatever Alberta’s brewing best right now. We chase nuance, balance, and the thrill of something new and still we respect the classics. What’s here today might be gone tomorrow, but it’s always worth the pour.

Wine à la Naturelle
We only pour natural, the way it’s meant to be—natural ferments, thoughtful farming, nothing rushed or forced. Mostly Gamay and mostly Riesling, mostly from France, Austria, Germany, and Australia and not much else. We chase bottles with soul, from old-school makers who know their land and let it speak. The list is always changing, but the spirit stays the same.
